Don’t let the name fool you! Rice cake is not a bakery, but an actual hot plate..A very sophisticated way of cooking rice… as a cake!..If you are bored of eating rice same way, try this cake, you wont be disappointed…you may even use this amazing looking dish to surprise your guests too! We first cook 200 gr of chicken breasts in boiling water. Do not throw away this water when the chicken breast is cooked since we will use this in our rice. When chicken breast is cooked, dice it and put it aside. For the vegetarian version of this rice cake you may skip this step. For the rice, we dice 2 medium sized onions and fry them in about 2 cl of vegetable oil for about 5 minutes until they become soft and pinkish in color, then we add 50 gr of sliced almonds and fry those for and additional one minute, and finally we add our rice and fry it for about 5 minutes too..When we are done with this step we add our spices. A teaspoon full of cinnamon, a teaspoon full of mint, tablespoon full of black pepper, a teaspoon full of allspice, a tablespoon full of salt, 40 gr dried currant, and our diced chicken breasts. Finally we add our two glass full of hot water that we collected after cooking the chicken breast. We let the rice cook for about 20 minutes in low heat and meantime we can start preparing our dough. For the dough, put 300 gr of flour (2 glass-full) in a bowl, in the middle of the flour make a hole with your finger and crack an egg into the hole, add 5 cl of vegetable oil, a teaspoon-full of salt and also about half a glass full of water and start mixing the doung with hand. The dough should be thick and not sticky..you can always add some more water or flour to reach the desired tickness of the dough. When your dough is ready split it to two unequal pieces..use about 2/3 of the dough for making a sheet that will cover our baking pan, and about 1/3 for making a sheet to make a lid on top if the baking pan. Prepare the baking pan with brushing with veget...
