Eating Low With Amy - Lemon Caper Salmon

I fell in love with the Lemon Caper Salmon I had at Sofia’s Cucina in Little Italy while I was in NYC. I liked it so much, I ate it twice! I told myself that I would figure out a way to modify it so it fit my Eating Low lifestyle. This version is pretty close. You could also grill the salmon and add the lemon, butter spray, and capers as a sauce. p.s. In the second half of this video, you can see a new picture I picked up in NY. It's a fat cat sitting on a scale that says 30 pounds. It reminds me of my obese cat Squeaker and is a good reminder to eat low!
