Kartoffelgratin aus Lyon
Der französische Koch Michel Iffa ist bekannt für sein köstliches Kartoffelgratin, eine Spezialität in seinem Restaurant "Le Connétable" in Lyon. GRATIN DAUPHINOIS Zutaten – für 5/6 Personen: 1,5 Kilo Kartoffeln, wenn möglich von der Sorte „Agata" 0,5 l Sahne 0,5 l Milch 2 Knoblauchzehen Salz Pfeffer Zubereitung: Die Kartoffeln schälen. Dann in ca. 3mm dicke Scheiben schneiden. Die Knoblauchzehen pressen. In einem Topf Sahne und Milch mit dem gepressten Knoblauch mischen. Die Mischung in eine Gratinschale gießen und die Kartoffelscheiben darin anordnen. Auf einer Herdplatte aufwärmen lassen bis die Flüssigkeit die oberste Schicht der Kartoffelscheiben erreicht hat und sie beinahe bedeckt. Ab dem Siedepunkt der Flüssigkeit, den Gratin für 30 Minuten in den auf 180° vorgeheizten Ofen stellen. Wenn der Gratin anfängt leicht braun zu werden, aus dem Ofen herausnehmen und mit einer Gabel oder einem Messer einstechen. Wenn die Gabel oder das Messer sich leicht wieder herausziehen lässt, ist der Gratin fertig. Wenn nicht, den Gratin wieder für einige Minuten in den Ofen schieben, bis er durch ist und die obere Schicht eine schöne Bräune erreicht hat.
