Das Restaurant "Bäkemühle" liegt bei Berlin in einer alten Mühle, umgeben von Wiesen und Feldern. Von diesen Feldern stammen viele der Zutaten von Koch Ronny Pietzner - auch für seinen Zander mit Kürbis-Gemüsenudeln.Zutaten für 4 Personen Senfsoße: Sahne 200 mlButter 0,05 gSchmand 300 gGemüsebrühe 500 mlDijonsenf 2 ELBornsenf 4 ELKurkuma 2 ELHonig 100 mlSalz, Pfeffer, Zucker Die Butter in einem Topf zergehen lassen, den französischen und den Bornsenf dazugeben und leicht mitrösten. Sahne, Brühe sowie den Schmand dazugeben und alles aufkochen lassen. Den Honig, Kurkuma sowie die übrigen Gewürze dazugeben. Gemüsenudeln: Hokkaido-Kürbis 30 gZucchini, gelb 30 gZucchini, grün 30 gMöhren 30 gGurke 30 gPfeffer, Salz1 Bund Dill Das Gemüse schälen und in feine Streifen schneiden. Anschließend in geklärter Butter anschwenken und mit Pfeffer, Salz abschmecken. Zanderfilet: Zanderfilet 4 Stck à 140 g Öl, Salz, Pfeffer In einer Pfanne etwas Öl erhitzen, den Zander hineinlegen. Mit frischen Kräutern (Rosmarin und Thymian) belegen. Vor dem Umdrehen die Kräuter abnehmen. Den Zander würzen und braten. Anrichten: Die Suppe in einen Teller füllen. Die Gemüsenudeln als Nest mittig in die Suppe legen und den gebratenen Zander drauf drappieren. Mit einem keinen Dillsträußchen garnieren. Guten Appetit!
