Asparagus is a special vegetable that has a very distinct taste. The flavoris complex and while it has a very green, fresh taste, it also has a certainbitterness and high mineral profile. The flavor can also change aftercooking and become a deeper kind of green taste. Asparagus is one of themost difficult vegetables to pair wine with because of its complexity. Inthis segment, Aldo Sohm and I take on asparagus and I add an additionalchallenge by topping the asparagus with vinaigrette.
