Chipotle Smashed Sweet PotatoesRecipe courtesy Alton Brown 2 large sweet potatoes, peeled and cubed2 tablespoons unsalted butter1 whole canned chipotle pepper in adobo sauce, chopped1 teaspoon adobo sauce from can of peppers1/2 teaspoon kosher salt Put cubed potatoes into steamer basket and place steamer into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Allow to steam for 20 minutes or until the potatoes are fork tender. Add butter to potatoes and mash with potato masher. Add pepper, sauce, and salt and continue mashing to combine. Serve immediately. Yield: 4 servingsPrep Time: 10 minutesCook Time: 30 minutes Sweet Potato PieRecipe courtesy Alton Brown 20 ounces sweet potatoes, peeled and cubed1 1/4 cups plain yogurt3/4 (.6 ounce) cup packed, dark brown sugar1/2 teaspoon of cinnamon1/4 teaspoon of nutmeg5 egg yolksKosher salt1 (9-inch) deep dish, frozen pie shell1 cup chopped pecans, toasted1 tablespoon maple syrup Special equipment: steamer basket Put cubed potatoes into steamer basket and place steamer basket into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Cover and steam for 20 minutes or until the potatoes are fork tender. Remove the water from the pot and dump the potatoes back into the pot. Mash with potato masher and set aside. Preheat the oven to 350 degrees F. Put the sweet potatoes in the bowl of a stand mixer and beat with the paddle attachment. Add yogurt, brown sugar, cinnamon, nutmeg, yolks, and salt, to taste, and beat until well combined. Set the pie shell on a sheet pan and fill with the and smooth the top. Sprinkle pecans on top and drizzle with maple syrup. Bake for 50 to 55 minutes or until the pie reaches an internal temperature of 165 to 175 degrees F; the middle should be still wiggle slightly.
